Hello! Today’s recipe is a Kenyan delight, its a quick meal but a very healthy and tasty one. Sweet potatoes mashed with peas and corn, you can have it with stew (anytype of stew), meat, fish or your favourite sides. This meal is very nutrituous and one every one should give a shot at.

You can add vegetables like carrots, celery or anyothers if you so desire to, it only adds to its great flavour.


  • Potatoes
  • Butter
  • Minced garlic
  • Diced onions
  • Blanched corn
  • Blanched peas
  • Paprika
  • Parsley
  • Chilli for taste
  • Salt

Directions on how to prepare Irio (Mashed potatoes with corn)

Preheat the oven to 400 degrees. Clean and dry the sweet potatoes, poke holes into the sweet potatoes, place in the microwave and cook for about 4 minutes. Wrap it up and place it the oven to roast for about 20 minutes or until they are cooked through, Add two tablespoons of oil or butter to a skillet, sweat onions, then add garlic, salt, paprika, and hot sauce, let it simmer for about a minute.

Add the potatoes then mash with a potato masher or put it through a ricer. Stir in the corn, peas and parsley, adjust for salt and pepper. And voila! Serve warm.
